i'm not a sushi guy but (based on shows like Bourdain's) i think all proper sushi places flash freeze or age their fish, right?

I liked treme but watched it before the wire which is why I later understood why wire people hate it but that's not really fair.

Yeah the chef explains that it tastes better the way he does it and tony mocks people complimenting how fresh fish at sushi places is so fantastic
