trying to get into salads and i keep making the same boring and lame shit. i bet some of you guys are real good at making salads. i also bet there are a lot of people like me on this board who would like to become Salad People but just simply ±dont±know±how! so hopefully we can have a nice robust discussion of salads in this here thread

here is an example of the type of lame boring salad i make all the time: grilled chicken, mushroom, onion, peppers; grape tomatoes & avocado, greens mix, gorgonzola pear dressing. it never tastes bad but it never tastes good.

an example of me TRYING would be like the one i made the other day which was goat cheese & sliced strawberries w/ that same greens mix in a poppyseed dressing. this also tasted completely average

I bring a greek salad (romaine, tomatoes, cukes, bell pepper, red onion, olives, feta w red wine vinegar & evoo) to work most days

I like removing corn kernels from the cob, sauteing them, and throwing em on top of my salad in the summer

sometimes I make japanese style ginger-carrot-miso dressing which keeps for about a week

I make a fennel salad with thinly chopped fennel, strawberries, walnuts, honey, and apple cider vinegar. maybe not exactly what you're looking for but you could easily add greens.

Lately been really stuck on mixed greens, cucumber, tomato, chick peas, feta, TJ’s croutons and a Greek dressing.

Also ride hard for a homemade vinaigrette over spinach, arugula, goat cheese, and some walnuts for crunch.

i usually make a cucumber/avocado salad with scallions, dressed with mayo/lime juice/sambal olek

cobb salads are good. honestly blue cheese dressing on anything

i like making chicken kale caesar salads. but if i already have kale and chicken, i also like to combine that with celery and dress it with a mayo/apple cider vinegar dressing

otherwise, burrata with figs, heirloom tomatoes, and a little balsamic is great

oh and I’m a big fan of radishes!!

I only do the corn if I’m eating at home. it takes 5 minutes. totally worth it

if you want to be seriously decadent, fry up 2 strips of bacon, cook the corn in the fat, and crumble the bacon into the salad

Pro tip - hummus thinned out with olive oil and/or lemon juice makes for a great dressing. Put it on anything.

other things i didn't see suggested: chickpeas, pumpkin or sunflower seeds (raw or roasted), chopped up dried apricot
