how does she know you're using too much?

you need enough oil to properly sear/brown the meat. 2 tablespoons is usually sufficient but who has time to measure that. you should measure it once, then cook your food and take it out and measure what's left. then tell her to go worry about something more important.

i made a goat cheese/herb souffle from essential pepin for mothers day. it didn't rise as much as i'd hoped. i beat the egg whites by hand and maybe i didn't do it good enough.

still was delicious though

Gotta cook that salmon mostly on its skin yo, then gently finish off on the other side with a knob of butter. Otherwise looks like a nice combination, your parsley folding skills though...def need some work...8-)

well, i wanted noticeable crust on the salmon, so i seared the fleshy side for 2.5 minutes, flipped to skin side down, and popped the pan in the oven for about 5 minutes, so it was still very tender and, imo, perfectly cooked. but i know what you mean with the technique described, i'll have to do it that way next time.

as for the *cilantro,

and i used both oil and butter in the pan so butter is at the very least involved with the salmon.

I've been roasting whole chickens almost every week for a while now. Not the most recent effort, but the only pic I had handy.

Mostly cakes, tarts and bread (which I always forget to get pics of) at school or work. Cakes are fun at first, but it's all so fussy. Probably going to focus on breadmaking once I graduate. Few things are as satisfying.

sassafras socks, my mother-in-law has been getting into cake making/decorating. Do you feel that pastry school would be something a fifty-something year old would enjoy going through if she is fairly serious about her endeavors in that field?

It's enjoyable for sure, but if she's looking to do mostly American style cakes or wedding cakes, a series of specific classes from a reputable local bakery (call around, a lot of places offer this stuff on the weekends or evenings) might be a better option. A full-on baking and pastry program whether through a community college or specialized school involves quite a bit more than just learning how to bake and decorate, and there's some pretty stressful sections. I've seen a few older students come and go already because they weren't prepared to commit to the entire thing. If she wants to do this as a new career and is pretty jazzed about it, then sure, there are plenty of worse things to do later in life, yknow?

For what it's worth, the big name places like CIA, Cordon Bleu or even the regional Art Institutes are huge money sinks and a certificate from these carries almost no real significance in the workplace. Have her take a tour of the programs offered at a community or state college; they're far better than people often expect.

my friend and i cooked a 5 course meal for 20 people last weekend and it was awesome. i wish i had decent pics.

homemade breakfast sausage with sous vide eggs, shrimp ceviche, corn+zucchini salad with bacon and a basil-lime-vinaigrette, grilled skirt steak tacos with chimichurri and roasted tomato salsa, peach granita.
