its so good. gjelina is one of the books i cook from the most.

the recipe is actually for boned half chickens but i usually separate the breast from the thigh and roast in two separate dutch ovens so the thighs don't overcook. the only thing i haven't perfected is figuring out a way to keep the skin from shrinking while its frying.

can y'all recommend a cookbook or resource with some emphasis on presentation / plating?

i think i'm a decent cook but most of what i make, even if it's time and labor intensive, is ultimately comforting and dumb and piled in a bowl. soups, stews, braises, risottos, noodles, etc.

i'd like some ideas on plating a steak or brisket or roast chicken that's more than just meat on one side of the plate, sides on the other.

Wanted to use the leftover short ribs in the freezer, so I made this with that and items around the house (only had to buy onions). No recipe. It was incredible. I'm proud of myself. Haha.

Braised Indian short ribs (sacrilege, I know):

Seared them off and then made the gravy/curry/whatever with onions, tomatoes, garlic, ginger, whole cinnamon, cumin, coriander, garam masala, turmeric, paprika, hot chili powder and chicken stock and braised it all in that for about 3 hours.

Will check that technique out. I've been having pretty good results with high q korean glutinous rice as long as I don't try to shortcut the soak stage.
